In her nearly five years, Annalyn has done a lot of great things, things to make us proud. Things like finally learning to walk after months of physical therapy, coloring a whole picture while staying (mostly) in the lines, learning to wash her hair on her own, jumping in the pool and choosing not to throw a tantrum when she’s mad.
But the moment that has made Mark the most proud so far, I’m pretty sure, is that morning we sat in Perkin’s eating breakfast. After the waitress placed our plates in front of us and walked away, Annalyn looked at her meal and promptly shouted, “Daddy! Bacon! I LOVE BACON!”
Yep. That’s his girl.
I really don’t make it often, but it’s a fact. The three of us are big fans of bacon. So when I saw that this weekend was actually International Bacon Day, I felt like it really made sense that we get a whole day off work and all. (What? Labor Day? Really? You think THAT’s the reason? Really.)
The other night I mentioned on Facebook that I couldn’t figure out what to make for dinner, but it had to feature grilled chicken and meet my picky eating family’s approval. You all had great suggestions, but in the end, bacon saved . . . my bacon. I made grilled chicken sandwiches with provolone, barbecue sauce and bacon – and it was delicious.
[Side note: Seriously, are you hanging out with us on Facebook? Because you really should be. It’s what ALL the cool kids are doing.]
So now I have half a package of bacon in my fridge, and I get to decide just how we celebrate this most important of holidays. While I search my recipe file and the Internet for options, here are a few of my bacon recipes for you:

And my best bacon tip: Cook it in the oven! It is so easy, so less messy, and so fast. Do it. You’ll thank me. Your thighs may not. But you will.
