{If you don’t get my oh-so-clever reference to the GEICO camel commercial, you need to go watch it. Makes me laugh every time!}
ANYWAY.
After seeing them on A Southern Fairytale (originally posted at Food, Family & Finds), I made these S’mores Rice Krispy Treats a few weeks ago and discovered two things. One, these are WAY BETTER than normal rice krispy treats.
And two, WHY haven’t I been using extra marshmallows in my rice krispy treats???
These bars really are good and, despite the three layer business, easy to make. I’m making them again tomorrow, as a matter of fact. Our small group is coming over for a BBQ, and we’re providing burgers, loaded baked potato salad and these delicious S’mores Rice Krispy Treats. And paper goods. And lemonade.
And citronella tiki torches, if I can find them on clearance somewhere today.
That potato salad is a little work-intensive, and the burgers? Well, half of them are going to be fancy-schmancy bacon burgers with balsamic bacon jam. At least, that’s the plan. (I also planned to make chipotle strawberry jam last weekend, and THAT didn’t happen. So….we’ll see.)
THE POINT IS that I needed an easy dessert to make, but wanted something a little more interesting than brownies-from-a-box (my go-to dessert, AS YOU KNOW). And I think these marshmallowy, s’mores-y treats are perfect for the job.
Ingredients
Bottom Layer:
4 tbsp butter
3 cups mini marshmallows
5 cups Golden Grahams cereal
Middle Layer:
8 tbsp butter
6 cups mini marshmallows
3 {more} cups mini marshmallows
7 cups Rice Krispies cereal
Top Layer:
1 bag milk chocolate chips
Preheat oven to 350 degrees. Spray two 8×8 pans (or one really big one) with baking spray.
Melt butter and marshmallows in large pot for bottom layer; stir constantly. Remove from heat and mix in cereal, then spread evenly into the pan(s). Next melt butter and six cups of marshmallows (in the same pot); stir constantly. Remove from heat and mix in cereal, then the remaining marshmallows. Press the mixture on top of the Golden Grahams layer. Top with the chocolate chips and bake for about five minutes. Spread the melted chocolate and let the bars cool. Cut and serve (or keep them all for yourself. I won’t judge.).

Oh my gosh! My husband and I LOVE that commercial! Every Wednesday I get a text message from him “Guess WHAT DAY IT IS!” And there is a day to celebrate s’mores?! Life is so good right now!
Alas, while I love S’mores, and while this recipe looks absolutely delicious, I won’t be able to enjoy them….unless I can find a good gluten free option for the Golden Grahams. I will, however, share this post because I know a lot of people who will love them as much as I would. :)

LOL…no worries on seeing gluten-filled treats. All they do is to cause me to be more creative in the kitchen…and if something looks good enough, it’s well worth the time. And even if I can’t find a suitable graham cereal substitute…adding the extra marshmallows and melting chocolate over it all sounds like a great way to save lives when PMS rears its ugly head. :)
